American Chopsuey

Inspired by the Chinese Food I ate here in Rockford ,the scores of American Chopsueys I have had in India,starting from my Childhood tryst with in CHOICE in Kannur ,Tasty Bites Manipal ,Chug wah and Temptation in Bangalore and my many other failed attempts at creating the perfect chopsuey,I landed this recipe from my Sister and Mom with a few alterations.

Indo Chinese-A-la-American Chopsuey

Preparation for 2,Time:30mts

It make look exhaustive,but belive me it is not ,since most of these things can be done parellely and the end result is simply OUT OF THIS WORLD!
Pre Paring the Veggies.
1.Micro Cook:A cup of Cabbage and 1.5 cups Carrot-3mts
2.In One Tsp Oil-Fry 1 tsp Ginger Paste
3.Add 1 sliced Onion
4.Add 2 Finely chopped Mushrooms.
5.Add the veggies from Above to the above Pan and Saute for a few Mts before removing it from the pan.

Preparing the Sauce:
1.Blanch and Puree 3 Tomatoes.
2.In a Sauce Pan Cook the Puree till it begins to Thicken
3.Add 2 tsp Soya Sauce,2 Tsp Vinegar,salt,Little Pepper/Chilli powder.
4.2 Tbsp Tomato Ketchup and Sugar(I added about 3 Tbsp preferring a sweeter taste).
5.Cook for 2 mts .
6. Add 2-3 cups Vegetable stock from the micrcooked veggies /Chicken stock.
7.Cook for a few mts before adding a paste of 1tsp Maida
8.Cook till sauce thickens.

Plain sauce

Take 1/3rd of the above sauce and keep aside.

Veggie/Chicken sauce :
1.To the 2/3 of the sauce in the pan add the pan fried veggies and shredded chicken .
2Cook for 5mts,at this point the sauce can thicken more,to this add either water/stock to get the consistency required.

Preparing the Noodles:
1.Bring Water to a boiling pt ie till it Bubbles.
2.Put in the noodles(1 Packet Veg hakka Noodle is wat I used for 2 ppl) and cook for exactly 2 mts(the Noodles will be partialy cooked)
3.Drain the noodles in a strainer,and add 1-2 tsp oil to keep the noodles strands separated.
4.Keep aside Half of the Soft cooked Noodles.

Fried Noodles:

1.The Other Half needs to be spread evenly on a large plate and sprinkle Maida on top to cover the noodles with the same evenly(this removes the water content of the noodles).
2.In a Frying Pan,Pour oil and bring to a High Heat.
3.Put a few Noodle strands to check the heat(it should be at a pt where a few mts will completly fry the Noodles).
4.Now put in the Cooked noodles in the heated Oil and Deep Fry in for a few mts ,the Noodles will almost stop sizzling when fried.

Fried Egg:
On a Girddle,pour a few drops of oil,a break a Egg and drop on the Pan,Fry On just one side and take it off.

Serving:
In a serving Dish,
1.Place Soft Noodles,
2.Pour the Veggies sauce
3.Place the fried Noodles
4.Pour the Plain sauce
5.Top it with the Fried Egg.

Voila!!!..American Chopsuey.
