Baingan Ka Salan

Preparation Time:20mts,Cooking time:20mts.


  1. One Large Baingan.
  2. Grated Coconut Roasted–7tsp.
  3. Coconut Milk(optional)-1tbsp
  4. Ginger paste-2tsp
  5. Garlic Paste-2tsp.
  6. Tamarind Pulp-3tsp.
  7. Turmeric-1tsp.
  8. Cumin powder-2tsp.
  9. Corriander Powder-tsp.
  10. Chilly powder-1tsp.
  11. Curry leaves-5-6


  1. Slit the Baigan in 4 to 3/4 with keeping it together at the top.
  2. In a Pan put some oil and Slightly fry the Baingan,for abou 5 mts.
  3. Take out the Baingain and fry the Garlic and Ginger Paste.
  4. Add the Chilly powder,tumeric ,Cumin and Corriander Powder,Curry leaves and roasted coconut.
  5. Fry till the aromas come out,add a little water if the mix burns.
  6. To this add the Fried baingan,2 cups of water,Coconut milk and Tamarind paste and cook till the vegetable is cooking and the gravy thickens.
  7. Serve with Roti.
