Egg Curry with Coconut Milk

Ingredients:

  1. 8 eggs Hardboiled and cut in 2.
  2. 1 Onion Finely chopped.
  3. 1/2 onion Finely sliced.
  4. 1 Tomato Finely sliced.
  5. Red chilli powder – 1 teaspoon
  6. Coriander powder – 1 teaspoon
  7. Cummin powder – 1 teaspoon
  8. Turmeric powder – ¼ teaspoon
  9. Coconut milk -1Cup
  10. Green chilli – 2 nos
  11. Ginger (finely chopped) –  1 tsp
  12. Garam masala  1 teaspoon
  13. Mustard -1tsp
  14. Oil
  15. Salt.

Method:

  1. Heat oil in a pan, when mustard splutters add onion,fry till golden brown.
  2. Add tomato, ginger and green chilli .Fry till leaves oil
  3. Add the Powders Chilli,corriander,cumin ,turmeric and garam masala and fry till nice aroma comes.
  4. Add coconut milk and bring to boil on low heat
  5. Add salt,egg pieces and bring to boil.
  6. Add Corriander leaves for Garnish.
