Mushroom-Spinach stir fry

  1. 6-7 Mushroom bulbs
  2. 2 cups of baby spinach
  3. 1/2 tsp Jeera/Cumin powder.
  4. 1/2 tsp Chilly powder
  5. 1 Small onion
  6. 1/2 Medium tomato
  7. oil for frying
  8. salt to taste
  1. Wash,skin and chop each mushroom to 6 pieces.
  2. Wash and chop baby spinach.
  3. In a pan add oil and fry the chopped onion,when they are brown add the powders and fry for 2mts.
  4. Add Mushroom and fry till they are devoid of water.
  5. Add the tomatoes and fry for a mt or 2.
  6. Now add the spinach and salt and fry till spinach is completely cooked and the water of the leaves are also absorbed into the dish.
  7. Serve hot with rice or roti.
