Shak shouka

shakshouka (5)


  1. 2-3 Eggs
  2. 1 Medium onion
  3. 1 large tomato
  4. 1 garlic clove
  5. 1/2 tsp paprika
  6. 1 tbsp tomato paste(if available)
  7. 1/3 tsp cumin powder
  8. Salt to taste
  9. olive oil
  10. Little bit of sugar
  11. handful of chopped cilantro


  1. In a thick bottom saute pan,dribble olive oil and fry chopped onion  and garlic till they are translucent,
  2. to this add tomato and salt,and allow the tomato to get mushy.
  3. Add paprika powder,cumin powder and little bit of sugar,mix well.
  4. Add tomato paste,and 1/2 cup of water and bring to a boil.
  5. Simmer and break individual eggs into the gravy while it is on the stove, make space with ladle before breaking individual eggs so they are spaced out .
  6. Cover it with lit and cook on simmer for 10-15mts or till eggs are cooked.
  7. Garnish with Cilantro,
  8. Serve with rice or roti.

Mutta roast



  1. 1 large onion
  2. 1 Large tomato
  3. ginger chopped
  4. 1 green chilly chopped
  5. 1 tsp corriander pwd
  6. 1 tsp red chilly pwd
  7. 1 tsp turmeric pwd
  8. salt t taste
  9. oil for frying
  10. 4 eggs


  1. Boil egg,remove the shell and incise it.
  2. In a pan,add oil and fry,onion ,green chilly and ginger till soft.
  3. Add all the powders and fry well
  4. Add tomato and cook till done.
  5. Add salt to taste,drop in the eggs and little water and cook for a few mts.

Mutta appam/Vellapam wth egg n the middle


While making regular vellappam,put little less batter,so there is not much that reaches the center after turning around.

Then break an egg into the center,cook till done!

Mini Pizza muffin

Simple snack item for kids:

  1. Pizza/bread dough( i use wheat based home made pizza dough)
  2. 2 Eggs
  3. Chopped veggies :mushroom,spinach,grated carrots.
  4. 3-4 tbsp chopped onion
  5. pepper powder to taste
  6. Salt to taste
  7. 1/2 cup milk
  8. Parmesan cheese
  9. Oregano
  10. 2 tbsp tomato paste.(I missed this as I dint have it)


  1. Mix Pizza dough and Oregano and knead well.
  2. In a pan,add some butter and lightly fry onion,chopped mushroom and spinach one by one.
  3. In a bowl,beat egg and add milk,tomato paste,the fried veggies,grated carrot,salt,pepper and keep it ready.
  4. Heat oven to 400F.
  5. In a muffin pan,lightly oil it .
  6. Take 1/2 a handful portion of the dough and line it in each of the muffin moulds.
  7. Add pour the mixed ingredients to the center of the mould till its 3/4 full and then top it with the cheese.
  8. Place the muffin tray in oven and cook for about 15mts.
  9. Let it cool down for 5mts,before taking out the tray.
  10. Serve warm with a dab of ketchup.

Egg Pulusu


This is a Sweet and sourish Egg curry which i picked from the following blog.


  1. 3 eggs boiled and halved
  2. 1/2 an onion chopped
  3. 1 green chilly chopped
  4. 4-5 curry leaves
  5. 1/2 tsp Chilly Powder
  6. 1/2 tsp Garam masala
  7. 1/4 tsp Hadi powder
  8. 3/4 tsp corriander powder
  9. 1/2 lemon sized tamarind
  10. 1tbsp jaggery
  11. 1/4 tsp Jeera
  12. 1/4 tsp Mustard
  13. Salt
  14. oil


  1. In a oil splutter some mustard and jeera,fry green chilly and curry leaves in the same oil.
  2. Add onion and fry till golden brown.
  3. Add turmeric,garam masala,chilly powder and coriander powder.
  4. Mix well,add jaggery,salt and tamarind juice .
  5. Mix well and bring to a boil.
  6. Add egg ,simmer.

Masala Egg Toast


  1. 4 slices of bread
  2. 2 eggs
  3. 1/2 medium onion
  4. 1/4 green chilly
  5. 1/4 tomato
  6. 1/2 tsp cilantro leaves finely chopped
  7. salt to taste.
  8. milk if required.
  1. Finely chop tomato ,onion,green chilly and cilantro and beat with egg.If you like a nice coating over the bread and want to increase the batter,add 2-3 tbsp of milk(this is optional).
  2. Put this batter into a plate.
  3. Dip bread in the mixture to get an egg coat(it should also contain the onion-tomato etc-if it does not do step 5).
  4. Place it on tawa and put a drop of oil(can avoid oil for good non-stick tawa).
  5. Put some of the onion-tomato mixture on top of the slices on either side before they start to fry.
  6. Fry on medium flame.
  7. serve hot.

Anda masala

Cookingtime:30mts.Serves:4(increasing the number of eggs to 4)


What you need:

  1. 3 Eggs boiled, shelled, and halved
  2. 1 large Onions
  3. 1 large Green chillies
  4. 1″ size Ginger
  5. 2 tbsp Gram flour
  6. 1 1/2 tsp oil
  7. 1 tsp Red chilli powder
  8. 1/2 tsp Turmeric powder
  9. 1 tsp Coriander powder
  10. 1 tsp Cummin powder
  11. 1/2 tsp Garam masala
  12. 75ml milk
  13. 2 medium tomato chopped
  14. Coriander leaves – a small bunch finely chopped
  15. Salt to taste


  1. Grind onion, green chilli, and ginger to a paste.
  2. Heat a pan  and add 1tsp oil.
  3.  Add the onion paste and saute it till golden brown.
  4. Add the gram flour and saute for a minute.
  5. Add red chilli, coriander, turmeric, cumin, and garam masala powders and saute again for another minute.
  6.  Sprinkle a few drops of water at this time, if needed.
  7. Add the tomatoes and coriander leaves and saute until the oil separates from the tomatoes.
  8. Add salt, milk, 1-1/2 cups of water, and the halved eggs and cook over low heat for 10 minutes or until the sauce reaches the required thick consistency.
  9. Serve it hot with rotis, plain or jeera rice, or bread. Enjoy!
