Mango Salsa

Mango season,and I bought a box full of Mango!.The Mango was not sweet as I expected it to  be,so what did I do with a dozen of large mangoes.I am trying everything I always wanted to,somethings I liked ,some were a disaster and some like this were simply too delicious.

  1. 1 chopped Mango
  2. 1/2 red bell pepper chopped
  3. 1 jalapeno chopped
  4. 1 tbsp balsamic vinegar
  5. 2 tbsp chopped cilantro
  6. 1 tsp lime juice
  7. 1tsp sugar
  8. 1 tsp salt.

Method:

Put everything together in a bowl and mix well.Serve with anything or eat just like that.!

Mixed bean salad

Mixed bean salad

 

Ingredients:

  1. 1/2 Handful of following beans:
    1. Garbanzo
    2. Pinto
    3. Red  Kidney
    4. Soy beans
    5. Black beans
    6. White plain
  2. 2 tbsp -Red pepper
  3. 2 tbsp Green pepper
  4. 1 small White onion
  5. 1 tbsp olive oil
  6. 1/2 lemon squeeze
  7. salt
  8. pepper
  9. 1 tsp vinegar
Method:
  1. Wash and soak all beans for atleast 2hrs.
  2. Cook it under pressure(or which ever method suits you best) till the garbazo beans is done(it takes the longest to cook if not soaked over night).
  3. Drain the water a set it aside for other use like soup or roti batter.
  4. Add all the rest of the above mentioned items including the veggies and mix well.
  5. Chill it before serving.
  6. ps:you can add a little bit of sugar for a sweeter taste.

Corn Apple Salad

Prep time ;5mts,setting time;30mts.Serves:2-3

“An apple a day keeps the doctor away” but if I were to give apple to my hubby every day it will drive my hubbaway.This made me think that I will have to present apple to him in some other way.So today I decided to go with a simple salad,which I was very doubtful about;mostly because salads are not one of my favorites but I went ahead with it anyway.I fell in love with this salad there fore I am sharing here.

What you need:

  1. 1 cup frozen corn
  2. 1 apple
  3. 2 tsp mayo
  4. less than a 1/4pepper
  5. salt
  6. pinch pf sugar
Method;
  1. Wash and cook corn or about 10mts with little salt.Drain the corn and keep aside.
  2. Wash and chop apple .Mix it with the corn ,salt,sugar and pepper.
  3. Add Mayo and lightly mix it.
  4. Put it in refrigerator for 30mts.
  5. Serve chilled.

Italian Pasta Salad

A recipe inspired by friend Pradeepa

 

  1. 1 Pack Vegetable rotini
  2. 1/2 cup of red and green bell pepper chopped
  3. 1 Onion chopped
  4. Olive oil 2 tbsp
  5. 2-3 tbsp italian dressing.
  6. Salt to taste

Method:

  1. Cook the pasta ala dante,with olive oil and salt to taste.
  2. Drain and rinse with cold water.
  3. In a bowl ,add the veggies with onion to the pasta ,olive oil and italian dressing and mix well.

Cool Boondi Raitha

This is a very common time of side salad used with both roti and rice dishes in the north and was introduced by my friend Prema to me.Ever since I have become an ardent fan of the same and love to have this on a summer afternoon along with some pulao or parata.
When I crave for this I normally restore to the Haldiram’s Boondi packet which comes with the masala that needs to go into the yogurt to complete the dish.

This time I have done the whole thing from scratch..ahem…not the yogurt….I used store bought yogurt,the best would be to ferment the yogurt at home .

  1. 2 Cup yogurt.
  2. 1 cup boondi
  3. 1/2 cup water.
  4. 6-7 mint leaves
  5. 1tbsp chopped coriander
  6. 1tsp sugar
  7. a pinch of cumin /Jeera powder
  8. a pinch of amchur /dry mango powder
  9. a pinch of chilly powder
  10. a pinch of garam masala
  11. a pinch of pepper powder
  12. Salt to taste

How to:

  1. Whisk yogurt and water with salt and sugar.
  2. Mash the mint leaves with mortar and pastel ,a little.
  3. Add this with chopped coriander leaves to the yogurt and refrigerate till you are ready to serve.
  4. If you like soft boondi ,you can do the following before refrigeration,else if u like crisp boondi-the following steps should be done just 5mts serving.
  5. Add the Boondi to the yogurt and mix well.
  6. Sprinkle the all the powders mentioned above.
  7. Garnish with a few crisp boondi and mint leaves.
  8. And its ready to eat!

KFC Coleslaw-My favourite sides

I am very fond of the KFC meal and most specifically the Cole slaw that they serve.I have borrowed this recipe from another site but tested it to perfection.

DRESSING:
1/2 cup mayonnaise
1/3 cup granulated sugar
1/4 cup milk
1/4 cup buttermilk
2 1/2 tablespoons lemon juice
1 1/2 tablespoons white vinegar
1/2 teaspoon salt

SLAW:
4 cups of Coleslaw mix veggies(1 cabbage head and 1/4 cup Carrots)

2 tablespoons minced onion
Preparation
1.Chop veggies in chopper, or chop fine.

2.Combine all of the dressing ingredients in a large bowl, whisk well.

3.Combine cabbage, carrots, and onion and toss well. Pour dressing over the slaw and turn to coat well.

4.Cover and refrigerate for at least 4 hours before serving to allow the cabbage to soak up the marinade. Overnight is best.
